Gin-gle Bells: Rocking Festive Cocktails

Gin-gle Bells:
Rocking Festive Cocktails

At the end of a long, stress-filled day, there’s nothing better than a refreshing gin and tonic.

And after the crazy rollercoaster of a year that has been 2020, what could be better than ending it off on a merry note with some tasty - and festive - gin cocktails.

If you’ll be hosting intimate family gatherings, virtual fiestas with your closest friends, or just keeping it cozy at home with your loved ones, holiday cocktails are a perfect addition to any festive celebration.

Hot Gin Punch

This festive, spiced cocktail is warm and punchy. It’s perfect for sipping outdoors with a cozy cashmere blanket wrapped around you, or in front of a toasty fireplace. The recipe makes approximately 6 servings, so it's ideal for intimate (and perhaps socially distant) gatherings.

Ingredients:

16oz/480ml gin

16oz/480ml sweet Madeira wine

1 tablespoon dark brown sugar (or more depending according to taste)

Peel and juice of 1 lemon (or more if you prefer)

Peel and juice of 1 orange

1 pineapple, peeled, cored, and sliced

3 cloves

3 cinnamon sticks

Pinch of ground nutmeg
Aniseed (if taste is preferred)

Method:

Gently simmer all of your ingredients in a medium-size pan over low heat for thirty minutes. Be careful not to boil the mixture. Then adjust the balance of flavors according to your taste preferences by adding more brown sugar or lemon juice. Once it’s ready, pour the punch into a jug or bowl and enjoy!

Spiced Pear Collins

This crisp cocktail consists of a homemade pear purée and a rosemary-clove syrup. These flavors are perfect for chilly evenings and pair perfectly with the natural juniper berry essence of gin.

Ingredients for Pear Purée and Rosemary-Clove Simple Syrup:
(makes enough purée and syrup for 5 cocktails)

2 pears, peeled and pitted

1 1⁄2 oz/44ml lemon juice

1 1⁄2 tsp. fresh rosemary

1⁄2 cup sugar

1⁄2 cup water

1 oz/30 ml whole cloves

3 sprigs rosemary

Ingredients to make one cocktail:

1 1⁄2 oz/44ml gin

1 1⁄2 oz/44ml pear purée (see below)

3⁄4 oz/22ml rosemary-clove simple syrup

3⁄4 oz/22ml lemon juice

Dry sparkling wine or soda water, to top

1 sprig rosemary, to garnish

Method:

To make the pear purée:

Slice the pears and in a blender, combine them with lemon juice and blend until smooth. Gently strain the mixture through a fine-mesh sieve and throw away the excess solids. You should be left with roughly 1 cup of purée.

To make the simple syrup

Combine the sugar, water, cloves, and rosemary in a saucepan and heat. When it reaches a boil, remove from heat and let sit for 30 minutes. Strain into a jar and store in the refrigerator.

To make the cocktail

Combine the purée, syrup, lemon juice, and gin in a cocktail shaker over ice and shake vigorously. Pour into a glass and top with a small splash of sparkling wine or soda water. Finish it off by using a sprig of rosemary as a garnish.
